Recipe of the Week – Happy’s Super Hot Salsa

I made this salsa Tuesday night on a whim. It turned out to be really delicious but HOT! I love spicy things so that was great for me but I don’t think the rest of my family will be getting near this salsa. I love spontaneously throwing a bunch of ingredients in a food processor and having it work out for the best. It reminds me of good providence. All of life might not work out as perfectly as my super hot salsa but we can trust that God’s Providence is hard at work in the world. ENJOY!

Two large tomatoes – quartered

1/2 of an onion

3 small sweet peppers

2 habanera peppers (1 if you do not want it super hot)

1/2 cup of cilantro

2 garlic cloves

Juice of 1 lime

juice of 1 lemon

1 can of Campbell’s bisque of tomato soup

1 tbs. sea salt

-Combine first 8 ingredients into a food processor and blend.

-Pour into mixing bowl, blend with can of tomato bisque soup

– Add salt, blend thoroughly

Serve with tortilla chips or as a topping on your favorite Mexican dish.
