Recipe of the Week: Honey Lemon Pasta Salad

It is hard for me to fathom that summer is here already. It really feels like last summer just ended! Summer is my favorite season but I guess I just was caught up in other things and did not see it coming. Life can be like that – It keeps moving whether we are ready or not.

Quite often though, in this fast-paced world, we are the ones who are moving too fast and life is on a stroll. If I step out into my backyard right now summer does not appear to be a busy place at all … the birds are singing softly, the air is warm and fresh, everything is so green and still. It is quiet – It looks like it is just waiting to be enjoyed, holding its breath, waiting for someone to jump out into its warm grass.

I wonder if that is God’s intention with summer. Is God calling out through summer time nature – HEY LOOK AT ME, I want you to enjoy me, come out and play!? It certainly seems to be the case, for I have yet to be disappointed when I have stepped into the great outdoors during summer. My fondest summer time memories are on a rock with ocean waves crashing before me or high on a mountain peak or looking into the woods fully ablaze with fireflies.

This summer don’t get so caught up in other things that you miss the very best part of it all, which is, well . . . summer itself. Play and rest in it, before we know it this season of warmth and freedom will be gone and we will be wondering – how could it be that fall is already here?!

I just sampled a pasta salad similar to this one from the Fresh Market. It was so good and it reminded me of the delicious, fresh and cool pasta salads that summer brings! Enjoy!

Dressing:

2 1/2 T fresh lemon juice

2 tsp. grated lemon zest

1 T Honey

1 tsp. chopped thyme

1/ 2 C extra-virgin olive oil

fresh ground salt and pepper

-In a small bowl whisk the lemon juice with the lemon zest, honey and thyme.

-Whisk in the olive oil and season with fresh ground salt and pepper.

Pasta Salad:

Bow tie Pasta (3/4 of a 1 lb. box)

1/3 cup diced green pepper

1/4 cup diced roasted red pepper

1 can mandarin orange sections – drained

diced red onion

toasted pine nuts

-Cook bow tie pasta, drain and set aside.

-Add diced green pepper, diced roasted red pepper, mandarin oranges and chopped red onion.

-Toss with honey lemon dressing and sprinkle with toasted pine nuts.
